This salad contains lots of amazing veg you may find on a vegan antipasto plate, and the dressing – wowza! Mixed greens, radicchio, roasted zucchini and eggplant, olives, sundried tomatoes, artichoke hearts and green beans are layered and topped with an awesome red pepper dressing – it’s the same one from our Taco Salad 🙂
