Banh Mi Noodle Salad

I must confess, I have only had Banh Mi once, and it was ages ago. From what I have read, the name Banh Mi refers to the bread the classic Vietnamese sandwich is served on, so I suppose this salad version is VERY loosely based on the sandwich I remember, but either way – wowza! Rice noodles, red cabbage, jalapenos, green onion, red peppers, cilantro, mint, roasted chili spiced cauliflower, radish and pickled carrots – topped with a homemade vegan mayo chili dressing.
Disclaimer – while this does have some heat, it is ‘cooled’ with loads of fresh herbs. If you are a honey garlic/mild bbq person this may be too hot for you. I’m a medium and I gobbled it right up!
