If I was going to pick one cuisine for the rest of my life, I’m positive I would pick Mexican. So much to tell you about this dish:
Tortillas are stuffed with a walnut, mushroom and cauliflower ‘meat’, black beans, red peppers, onions and sweet potatoes. Topped with a zippy chipolte enchilada sauce and a cashew nacho ‘cheese’ sauce. This meal is perfect to bunker down with on a dreary winter night…perhaps dreaming about a vacation to Mexico 🙂
Comes frozen (8.5×5.5×2 inch container) and needs to be heated for 60-70mins. Great topped with fresh cilantro and avocado!
