My late Nan absolutely loved when I made her these Stuffed Pasta Shells – which made me very happy, because girl could cook! Perfect to pop in the oven on a chilly night you are craving something filling and comforting (I love a good ‘carb and chill’ night). A bunch of roasted veg (peppers, mushrooms, eggplant, zucchini, tomatoes, onion, spinach and sweet potato) and our almond ‘ricotta’ are stuffed into jumbo shells. Everything gets topped with our tofu crumble Bolognese – that you will be surprised isn’t meat – and a sprinkling of cashew ‘parm.’
Comes frozen (8.5×5.5×2 inch container) and needs to be heated for 60-75 mins.
