The oranges, reds and yellows of this soup just reminds of me of sunshine…and right now I need some of that brightness. Anyone else done with winter? Sweet potato, butternut squash, carrot, chickpeas, lentils, curry and loads of warming spices. Finished with coconut milk, spinach and cilantro. It also freezes quite well if you want to stash this one away for another day.
